Fresh corn has become a new favorite for the palate in Sichuan, with some cobs featuring a mix of sweet and waxy kernels, offering two distinct textures in a single bite.
By strategically positioning production areas and carefully timing market entry, the industry has created a differentiated competitive edge.
The breeding focus is shifting from merely pursuing high yields to prioritizing superior nutrition and taste, marking a quality evolution.
Multiple favorable factors, including policy support, significant processing potential, and flexible crop rotation schedules, are creating a combined positive effect.
In the peak of summer during July, Sichuan's fresh corn is at its harvest peak. Walking into any supermarket or market in Chengdu, fresh corn is easy to find. With increasingly better taste, fresh corn has not only become a regular feature on Sichuanese dining tables but also a bright new name card for the province's agriculture.
"Sweet-waxy corn, featuring both sweet and waxy kernels on the same cob for two textures in one bite, is the new taste sensation for Sichuanese," said Song Jun, Director of the Institute of Biotechnology and Nuclear Technology at the Sichuan Academy of Agricultural Sciences, on July 8, pinpointing the key to the value appreciation of Sichuan's fresh corn.
According to Song Jun, the planting area for fresh corn in Sichuan reached 1.2 million mu in 2025. Sweet-waxy corn accounts for over half of this area, waxy corn for about 30%, and sweet corn for only 20%. This "5:3:2" planting distribution reflects consumer preference for specific taste profiles in fresh corn.
Strategic Positioning of Four Major Production Areas
Year-round local supply is gradually becoming a reality. In 2016, Sichuan adjusted and optimized its planting structure, providing a major development opportunity for fresh corn, with the planting area jumping from an initial few ten-thousand mu to 800,000 mu. Over the following decade, its industrial scale grew year by year, establishing Sichuan as a major national production and consumption region for fresh corn.
What does the current industrial map of Sichuan's fresh corn look like? Song Jun introduced that the Chengdu Plain is the largest production area in the province, with an area close to 500,000 mu. The southern Sichuan and northeastern Sichuan regions follow closely behind. The Panxi area was once a traditional advantage zone, but as the proportion of economic crops like vegetables, grapes, and blueberries has risen, the area dedicated to fresh corn has somewhat decreased.
Nationally, Sichuan's fresh corn planting area ranks among the top. "Among the nine provinces with planting areas exceeding 1 million mu nationwide, Sichuan may not have the largest area, but its varieties have distinctive characteristics," Song Jun said.
In terms of market timing, Sichuan has formed a staggered competitive pattern. Thanks to its unique climatic advantages, corn from the Panxi area can hit the market as early as late April to early May, capturing the earliest batch of the fresh corn market in the entire province. Corn from other regions, under normal cultivation conditions, is concentrated for market entry from mid-June to July.
"To fetch a good price, growers try every means to capture the 'early and late' periods, avoiding the peak concentrated market season," Song Jun told the reporter. On the Chengdu Plain, using seedling transplanting methods with seeding around the beginning of spring allows fresh corn to reach the market by mid-to-late May. In Longquanyi District of Chengdu, growers choose summer-sown corn varieties, planting in July to delay market entry until early October, with staggered sales bringing higher returns.
However, climatic variables also affect market rhythms. Song Jun mentioned that last winter's higher temperatures led to early market entry for fresh corn from Yunnan and the Panxi area, coinciding with the market season for corn from Hainan. This caused the wholesale price of Hainan's fresh corn to drop from the usual 3 yuan per jin to 0.5 yuan. "This is a warning—fresh corn is a highly marketized product; the market window period is the profit window period," Song Jun said.
Looking at year-round supply, Sichuan could theoretically achieve annual supply of fresh corn—by utilizing different varieties, cultivation practices, and regional layouts, the Panxi area could even supply fresh corn in winter. "But winter production costs are high, and the appearance isn't great, so it's not cost-effective," Song Jun admitted. Currently, the winter market is mainly supplied by Hainan, Yunnan, and other regions, while Sichuan focuses its efforts on the main season fresh corn from May to October.
"Focusing on quality, characteristics, and capturing the market 'window period'—this is where the market competitiveness of Sichuan's fresh corn lies."
Breeding Shifts Towards "Tasty and Nutritious"
Three major advantages open up growth space. The direction of fresh corn variety breeding reflects profound changes in consumer demand. "In the past, breeding pursued large size, high yield, and good appearance; taste was a secondary consideration," Song Jun said. "Now it's different. Consumer demands for quality are increasingly high, with indicators like sweetness, waxiness, and texture moving to the forefront. Whether the kernel arrangement is neat and the color is bright also affects market acceptance."
It is worth noting that nutritionally fortified varieties are becoming a new trend. Functional varieties like anthocyanin-rich purple corn and high-folate corn are moving from the laboratory to the dining table. "Consumers not only want good taste but also to eat healthily," Song Jun said.
Among sweet-waxy corn varieties, besides the mainstream types with sweet-to-waxy kernel ratios of 3:1 and 9:7, even more premium "sweet-waxy same kernel" varieties are emerging—where each kernel possesses both sweet and waxy textures. "This is the future development direction," Song Jun assessed.
Discussing the industry's development prospects, Song Jun provided a set of data: in recent years, Sichuan's fresh corn planting area has maintained an annual growth rate of about 10%. "Waxy corn and sweet-waxy corn have the greatest development potential," he specifically mentioned.
Regarding the driving forces behind this growth momentum, Song Jun summarized three main reasons. First is favorable policies. Fresh corn possesses both grain attributes and economic value. Under the national backdrop of "stabilizing grain and increasing income," it can both ensure food security and improve planting profitability. "This is like giving growers 'double insurance'," Song Jun said.
Second is significant processing potential. Fresh corn has long broken through the limitation of single fresh sales. Processed products like vacuum-packed corn cobs, corn beverages, corn cans, and corn starch extend its industrial chain and add higher value. Song Jun analyzed, "By zoning and categorizing planting to meet diversified needs, sales channels are secured, giving growers more confidence."
Third is flexible crop rotation scheduling. Fresh corn has a short growth period, generally requiring only about 90 days, a full month less than the 120-day growth cycle of ordinary field crops. "This 'gained' month allows ample time for the next crop," Song Jun explained. Fresh corn can also be intercropped with various crops like peppers, soybeans, and medicinal herbs, demonstrating high adaptability. "Basically, any crop that can be paired with ordinary corn can be paired with fresh corn."
However, Song Jun also reminded growers that although fresh corn offers good returns, its cultivation management is much more meticulous than that for feed corn. "From sowing to harvesting, every step requires careful attention to grow corn that the market recognizes."
